Pumpkin protein pancakes

Pancakes are always an easy go-to breakfast for a large crowd. However, a lot of times they leave you feeling full and then your stomach is growling again shortly thereafter. Why is that? Because most pancakes are made with tons of sugar and white flour (nothing really of substantial nutrition).

Instead of reaching for the easy mix batter, next time try these delicious pumpkin protein pancakes. They are filled with oats, vanilla pea protein and pumpkin, so they taste yummy and will keep you feeling full and energized! These make a great breakfast or you can treat yourself after a hard workout.

Mix the ingredients listed below into a large bowl and proceed to cook them as you would any other pancake. It’s that easy!

Ingredients
1 scoop protein powder
1/2 c. pumpkin puree
1/2 tsp. cinnamon
1/4 tsp. ground nutmeg
1/2 tsp. baking powder
2 egg whites
1/2 c. oats
1/2 c. + 2 tbsp. water
5 packets sugar substitute
