San Antonio AIDS Foundation clients get chef-prepared meals
SAAF kitchen provides 3 meals daily for people in HIV community
SAN ANTONIO - Clients at the San Antonio AIDS Foundation got a special treat Thursday afternoon at lunch, a chef-prepared meal.
It's part of the foundation's "Chef of the Month" project. Through the project, directors invite a different local chef every month to prepare meals for SAAF residents and clients.
"Our nourishing SAAF kitchen actually provides three meals a day for people in the HIV community and they do breakfast lunch and dinner," said Samuel Valdez, marketing assistant with the San Antonio Aids Foundation. "And we invite a local chef to come here and prepare a meal that the clients wouldn't otherwise get."
Thursday's meal was not only a top-of-the-line dish prepared by two executive chefs, it was also healthy.
Zedric's Executive Chef Zach Lutton, who prepared Thursday's meal, is also a part of the "Por Vida" campaign, which promotes healthier food choices in restaurants.
"We are all part of the chef cooperative and it's a really good thing to give back to the community," said Lutton. "So we're just excited to be a part of it."
Valdez said the "Chef of the Month" program is a win-win because their own chefs get some pointers from the visiting chefs and the residents love the food.
On the menu Thursday was spaghetti squash, topped with turkey Ragu and a gluten-free key lime pie.
"I ate the key lime pie," said Rogelio Saucedo, a SAAF client. "And the spaghetti. It was delicious."
The Chef of the Month Program was initiated last year and Valdez said they are looking forward to keeping it going next year.
He said they are encouraging anyone who would like to participate to call them at 210-225-4715.
"The great thing about this is that when invite the chef, we pay for all the ingredients," said Valdez. "The chef doesn't have to pay anything for it. All we ask for is for their time and expertise in doing this."
