Robots, create your own meal, both part of new Mediterranean restaurant

SAN ANTONIO – TRIO Modern Mediterranean, located at 8251 Agora Parkway, is bringing a new kind of cuisine to the area.

“We are trying to educate people on Mediterranean food,” owner Anise El Hiyani said.

A lot of things are done differently at TRIO. There is no menu and the meat is prepared by a robot.

“Our meat is crafted daily and marinated,” El Hiyani said. “We use our robots we call them, and it cooks and cuts the meat at the same time.”

When you enter the restaurant, you pick the base of your meal. Choices include salad, rice, street fries or a pocket. 

Because of the robots, the time it takes to add your protein to the base is faster and you are finished creating your meal in about three minutes.

With a full bar and a patio included, El Hiyani is ready for his grand opening on Saturday.

“We are going to have free food from 11 a.m. to 2 p,m., and the first 10 people will get free food for six months,” El Hiyani said.

With four other locations opening in the next couple of years in San Antonio, TRIO Modern Mediterranean could become a popular go-to spot for a great, healthy meal.
