Grilled Street Corn Tacos

Ingredients

  • 4 corn on the cob
  • 1 red onion, sliced into rings
  • 1 cup poblano peppers, roasted and diced
  • 1/2 cup Roma tomatoes
  • 1 tbsp jalapeno, minced
  • 3 tbsp fresh lime juice
  • 1/2 tsp cayenne pepper
  • 1/2 cup Cotija cheese, crumbled
  • 1 package tortillas
  • 1/2 cup fresh cilantro chopped

Instructions

1. Preheat grill to 350°F

2. Shuck corn and place on grill whole. Grill corn until colored on all sides.

3. Grill onions and peppers until onions have good grill marks and smell sweet and peppers are blistered and skin is blackened. Remove all veggies from grill and let them rest.

4. Cut corn off cob into a bowl and dice grilled onion, remove skin and seed from peppers and chop them.

5. Combine all in same bowl. Add in diced tomatoes, jalapeno, lime juice and cayenne pepper. Mix well to incorporate then build you taco with corn mixture on tortilla then sprinkle taco with cheese and cilantro. Add in favortie taco garnishes and serve!
