Poe left the Pizza Hut on Bandera Road to make a delivery late Friday night, carrying out three pizzas, bread sticks and several liters of soda, investigators said.
Lt. Luis Martinez said Poe's co-workers didn't seemed puzzled when he didn't return from his order.
"When he didn't (come back), I don't think they thought anything happened," Martinez said. "He just didn't come back."
Officials said Poe could have been killed during a fake pizza order.
Investigators said he was supposed take a delivery to Old San Antonio Road.
Martinez said Poe may have been killed during a robbery.
"Maybe they were just after you know, taking what he had on him, and something went wrong," Martinez said.
Investigators who searched Poe's Chevy Cavalier said the food he had taken to deliver was never recovered.
Poe's death is the first killing recorded in Boerne for 2007
Pizza Hut issued a statement that stated driver safety is a top priority and is taken seriously among co-workers.
