SA chefs: Football, Cajun food go hand-in-hand

Football and food. It's a pretty enticing combination and it goes to a new level when it is the Super Bowl.

This year’s parties can really be spiced up, since the game is in New Orleans.

“Cajun and football goes hand-in-hand," said Dave Saylor, owner of Acadiana Café on Loop 410.

There are so many ways to keep the party cooking without the traditional chips and dips.

According to Dwana Dominick, owner of Big Easy Café off of Walzem, you pull out all the stops. 

Fried catfish, red beans and rice, jambalaya, sausage, potato salad -- she is even cooking a blackened T-bone for her Cajun party this year. 

When you put it all together, there is a simple key to victory.

"That it is flavorful, that it's spicy, that it excites your mouth (and) that is goes down real good," Dominick said.

Acadiana is going with a twist on the traditional wings and football combination.

They are offering a deep fried Cajun chicken

“It’s injected with seven and a half herbs and spices, Saylor said.

They also have a plate with fried wings and gizzards and livers that include a special Cajun sauce.

"If you have a zest for football, you have to have a zest for Cajun,” Saylor said.
