Cucumber and Mint Raita Veggie Dip

Ingredients
5 inch piece of cucumber
3 Tbsp. fresh mint, chiffonade
1 ¾ cup plain yogurt
Salt and pepper, to taste
¾ tsp cumin, ground
Pinch of cayenne (optional)


Equipment
Vegetable peeler
Box grater
Mixing bowl
Measuring cups/spoons
Serving bowl

Directions
1.    Peel the cucumber and coarsely grate. Squeeze out any excess moisture from the cucumber and let it sit and drain.
2.    Mix the remaining ingredients and add the drained cucumber.
3.    Place in a serving bowl and sprinkle with cayenne.

Yield: 4 servings

Note: This can be served along the side of any fresh vegetables. It is also good with gyros or grilled meat. Any way is delicious - Enjoy!
