Mexican Style Street Corn

6 ears of corn, grilled or steamed
2 cups of Mexican crema
¼ cup Lime juice
1 Chipotle
2 Tbsp of chile powder
½ Cup queso cotija or queso fresco
6 Lime wedges
½ cup chopped cilantro

1. In a Blender add the chipotle, Mexican crema and lime juice, blend until smooth.
2. On each ear of corn, layer a drizzle of the Chipotle flavored crema, queso cotija, chile powder, cilantro, and garnish with a lime wedge
3. Enjoy.

Alambre Street Tacos

8 oz Grilled fajita
2 oz Diced white onion
4 oz Chopped bacon
4 Corn tortillas
1 Cup of chopped cilantro
8-10 Lime wedges
½ cup chihuahua or monterrey jack cheese

1. Saute the bacon and onions in a pan until cooked almost all the way through.
2. Add the chopped fajita and saute with the onions and bacon
3. Turn off the heat and add the cheese
4. Fill tacos, garnish with cilantro and lime wedges and enjoy.
