Bite Cube Salad Recipe

Serves 6 people

1 seed less water melon

1 block of feta cheese ( aprox 1/2 Lb)

12 kiwis

Cut the fruit and feta cheese.

3/4" up to 1-1/4" start with the kiwi first since is small and challenging to cut.

When cutting the watermelon and feta cheese, use the kiwi as a size guide.

·         key is uniform sizes cubes

·         easier to cut them into long strip first,then turn the strips sideways and cut them in to cubes

·          a good sharp knife and cutting board will help a lot

Red wine vinaigrette

1/2 cup of red wine vinegar

3 tbs lemon juice

2 tsp of honey

Salt & Pepper to taste

1 cup of olive oil
