8 degrees. That was the "feels like" temperature this morning when I checked my weather app. If I had any motivation to get out of my toasty, cozy bed this morning, that immediately squashed it.
You know what I could use right about now? A sunny island, a beach with pink sand and blue water, a teeny bikini, big sunglasses, a caftan, a fruity cocktail, and zero cares in the world. But since I live in New York City and not Hawaii, this coconut peach protein smoothie will have to do. Ashley Diamond, author of one of our favorite NYC healthy living blogs, Healthy Happier Bear, created this recipe in the midst of scuba certification training–and shortly before she spent the new year in St. Croix! While taste testing this recipe, she says she "was immediately transported to the Cozumel or Bermuda beaches where I enjoyed piña coladas on a daily basis last year."
With way less calories and sugar than a typical piña colada, but still all of the same tropical flavors, this smoothie packs in a whopping 25 grams of vegan protein per serving thanks to our Vanilla Pea Protein Powder. In the (freezing cold) dark of winter, summertime daydreams are simply unavoidable with this beach-worthy beverage. Say it with me now: only 56 days until spring!
Coconut Peach Smoothie
Serving Size: 2 smoothies
1 cup Silk Almond Breeze Unsweetened Vanilla
1 cup frozen peaches
1 tsp. coconut extract
2 servings Pure Matters® Vanilla Pea Protein
2 tsp. granola, preferably a less processed one with nuts
1 tsp coconut
Combine first 4 ingredients in blender, blend well.
Pour smoothie mixture into 2 glasses.
Top each smoothie with a sprinkling of coconut and granola, preferably one with nuts. Enjoy!
