Pico De Gallito- Fresh flavor without the heat! 

Recipe creates 7 servings, 4 tablespoons per serving. 


  • 1 Cup Cherry or Grape tomatoes- diced
  • 1/2 Cup Poblano pepper-diced 
  • 1/4 Cup Green Onion- finely chopped
  • 1.5 tsp Lime Juice
  • 2 Tbsp Cilantro- finely chopped
  • 1/4 Garlic power


  • Chop and dice the pepper, making sure to remove pith and seeds.
  • Chop and dice tomatoes and onion. Combine with pepper in a bowl.
  • Add lime juice, cilantro, and garlic powder. Gently stir all ingredients for full coverage. 
  • Chill for 30 minutes, then serve with baked tortilla chips. 
  • Healthy Tips

    • Try using half poblano pepper and half yellow bell pepper for a pop of color.
    • For a satisfying crunch, add 1/4 cup diced jicama. 
    • To spice things up, add diced jalapeno.
