Powerhouse Red Quinoa
A recipe by Powerhouse Bakery
- 24 oz low sodium chicken broth
- 1 cup red quinoa blend
- 1 1/2 Tbsp ginger pulp
- 1/2 Tbsp garlic pulp
- 2 stalks green onions (scallions)
- 1/4 cup cranberries (optional)
- 1/4 cup pistachios (optional)
- 3 tsp olive oil
- 1 Tbsp sesame seeds
- 3 Tbsp lemon juice
- 1 zest of lemon
- 1/4 cup citrus rice vinegar
Bring broth to boil in large stock pot. Add quinoa, reduce heat to low and cover. Keep covered for 10 minutes. Remove from heat and let sit another 20 minutes until light and fluffy.
Combine garlic, ginger, vinegar and sesame seeds together in a small bowl. Add mixture to quinoa. Mix additional ingredients in with quinoa.
Serve with green beans, other veggies, or meat.
