Stuffed Bell Peppers

Ingredients:

  • 3 red and green peppers 
  • 2 lbs lean ground turkey
  • 1/4 cup mighty seeds
  • 2 Tbsp Worchestershire
  • 1 Tbsp olive oil
  • 1/3 cup oats
  • 1/3 cup fresh corn
  • 1/3 cup chopped celery
  • 1/3 cup chopped green onion
  • 1 tsp each: sage, garlic powder, salt and pepper
  • 2 Tbsp ketchup for garnish

Directions:

Combine all ingredients and stuff cooled peppers with 4.5oz stuffing. Garnish top with ketchup. Bake at 350 for 40 minutes.

Serving size: 1/2 pepper, 5oz filling
