Cubed Salad

A recipe from Bite Restaurant

Ingredients:

  • 1 seedless watermelon
  • 1 block of feta cheese (aprox 1/2lb)
  • 12 kiwis

Directions:

Cut the fruit and feta cheese into 3/4" up to 1-1/4" cubes. Start with the kiwi first since it is small and challenging to cut. When cutting the watermelon and feta cheese, use the kiwi as a size guide. Stack in whatever order you want to create a cube. 

Red Wine Vinaigrette

Ingredients:

  • 1/2 cup of red wine vinegar
  • 3 tbs lemon juice
  • 2 tsp of honey
  • Salt & pepper to taste
  • 1 cup olive oil

Directions:

In a bowl, mix vinegar lemon juice and honey. Add salt & pepper. Gradually mix in the olive oil. Pour onto cube salad.
