Baja Taco's with Grilled Shrimp

Baja Taco's with Grilled Shrimp

Ingredients 

  • 16 ea Guerrero Corn Tortillas
  • 2 tsp HEB Extra Virgin Olive Oil 
  • 8 oz HCF 41/50 Peeled & De-veined Raw Tea Shrimp
  • 1/8 tsp Salt
  • 8 oz Baja Slaw
  • 2 tblsp Kraft Chipotle Mayo 
  • .5 ea Small limes (optional) 

Directions

  • Grill shrimp w/olive oil on a flat top or skillet and season with salt. 
  • Warm two tortillas per taco on a flat top or skillet. 
  • Build taco: 2 tortillas, shrimp, chipotle mayo, slaw. 
  • Cut lime into wedges and squeeze juice as needed. 
  • Baja Slaw

     

    Ingredients

    • 8 oz HEB Shredded Cabbage
    • .5 ea Red Bell pepper
    • 2 oz Rice Wine Vinegar
    • 1 Tblsp Sugar
    • 2 oz HEB Extra Virgin Olive Oil 
    • .5 ea Fresh squeezed lime 
    • 1/8 tsp Salt 

    Directions

  • Slice bell pepper into 1/8th inch strips. 
  • Toss slaw mix and bell pepper together. 
  • Mix rice wine vinegar, olive oil, sugar, lime juice and salt together until sugar disolves.
  • Mix liquid mixture with slaw mixture and blend well.
