RECIPE: Chipotle Rub Prime Rib
Recipe provided by La Familia Cortez Restaurants
Ingredients:
1 10-12 lbs. of ribeye loin
1 bag of mesquite wood chips
1 bottle of tequila
2 oz. liquid smoke
1 bell pepper (sliced)
½ onion (Sliced)
1 bunch of celery
Chipotle Rub:
1 cup garlic powder
¾ cup onion powder
1 cup sea salt
2 cup brown sugar
1 cup chipotle powder
¼ cup smoke paprika
Steps for the Chipotle Rub Sauce:
Mix all ingredients
Cover all sides of the ribeye loin with the Chipotle Rub
Place mesquite wood chips in a 6 inch pan then soak with tequila and liquid smoke
Add bell pepper red, celery and onion
Add in the mesquite pan a smaller perforated tray for the prime rib, prime rib should be already covered with the chipotle rub sauce
Cook in the oven at 250 degrees Fahrenheit for 4-6 hours, depending on the size of the meat. Intern Meat temperature must reach 130 to 140 degrees.
