RECIPE: Pumpkin streusel coffee cake

SAN ANTONIO - Pumpkin Streusel Coffee Cake

Streusel

Ingredients:

  • 200 grams brown sugar
  • 64 grams all-purpose flour
  • 120 grams toasted pecans
  • 4 grams cinnamon
  • 86 grams butter, melted

Batter

Ingredients:

  • 150 grams canola oil
  • 150 grams sugar
  • 150 grams brown sugar
  • 366 grams pumpkin puree\
  • 170 grams sour cream
  • 3 eggs
  • 1 1/2 teaspoon vanilla
  • 381 grams flour
  • 2 grams baking soda
  • 6 grams baking powder
  • 2 grams salt
  • 2 grams cinnamon
  • 2 grams ginger
  • 1 gram nutmeg

Directions:

Preheat oven to 325 degrees. Add wet ingredients first, mix, then fold in the dry ingredients. Layer with batter and streusel and then bake for 45 minutes.
