Recipe: Poma-mole

Makes six servings

Recipe:

  • 3 medium avocados, skin and seed removed
  • 1 tablespoon lime juice, fresh squeezed
  • 3 tablespoon red onion, chopped
  • 1 tablespoon cilantro, chopped
  • 1/4 teaspoon kosher salt
  • 1/2 jalapeno, deseeded and chopped
  • 1/2 cup pomegranate seeds (equivalent to 1 medium pomegranate)

Steps:

1) Place avocados in medium bowl and mash with fork. Stir in lime juice, cilantro, salt and jalapenos.

2) Stir in pomegranate seeds.

3) Serve with baked tortilla chips.
