Zucchini Noodles with Simple Roasted Tomato Sauce

Ingredients:

  • 1 Tbsp olive oil
  • 8 Oz H-E-B Zeema or Angel Sweet Tomatoes
  • 1/2 Tsp Himalayan pink salt
  • 2 Tsp fresh garlic, finely minced
  • 1 Tbsp Fini Balsalmic Reduction with Porcini Mushrooms
  • 1 Tbsp fresh basil leaves, finely chopped
  • 10 .7000 Oz zucchini spirals

 

Instructions:

  • Heat a large skillet over medium high heat.
  • Add olive oil, tomatoes and salt until tomatoes skins begin to brown and shrivel.
  • Smash tomatoes gently with back of a spoon.
  • Add garlic and balsamic, reduce heat to medium and simmer gently for 3 to 4 minutes.
  • Add fresh basil and zucchini to skillet and toss to coat.
  • Cover and simmer 5 to 6 minutes, or until zucchini are tender firm. Serve immediately.
  • Serve with freshly grated Parmesan cheese if desired.
