SAN ANTONIO – Pumpkin Streusel Coffee Cake
Streusel
Ingredients:
200 grams brown sugar
64 grams all-purpose flour
120 grams toasted pecans
4 grams cinnamon
86 grams butter, melted
Batter
Ingredients:
150 grams canola oil
150 grams sugar
150 grams brown sugar
366 grams pumpkin puree\
170 grams sour cream
3 eggs
1 1/2 teaspoon vanilla
381 grams flour
2 grams baking soda
6 grams baking powder
2 grams salt
2 grams cinnamon
2 grams ginger
1 gram nutmeg
Directions:
Preheat oven to 325 degrees. Add wet ingredients first, mix, then fold in the dry ingredients. Layer with batter and streusel and then bake for 45 minutes.
