Watermelon Pico de Gallo

Ingredients:

  • 2 cups finely diced watermelon
  • 1/2 cup diced jicama 
  • 1/4 cup diced red onion
  • 1/3 cup finely chopped cilantro
  • Juice of 2 limes
  • 1/4 tsp finely chopped garlic
  • 1 finely diced and seeded jalapeno, if desired
  • Salt and pepper to taste

Directions:

Combine all ingredients and enjoy with your favorite corn tortilla chips, cinnamon sugar pita chips or on top of chicken, beef, pork or fish!

Tip: If jicama lacks moisture, squeeze additional lime juice and let sit 5-10 minutes before mixing all ingredients. This pico de gallo's taste and consistency is even better the next day after all flavors have marinated, but is still delicious to enjoy immediately after preparing!
