Grilled Pineapple Steaks with Creamy Dragon Fruit Raita 

Prep time:  15 minutes    Cook time: 10 minutes

Ingredients:

  • 1 ea. fresh pineapple, peeled and cut into thick circles.
  • 1 ea. fresh dragonfruit, peeled and flesh scooped out.
  • 1 cup greek style yogurt
  • ½ tsp. vanilla extract
  • 1 ea. over ripe banana
  • 6 ea. large fresh strawberries
  • 2 tbsp. grapeseed oil

Instructions:

1. Pre-heat Grill to 350F.

2. Brush the Pineapple steaks with grapeseed oil and cook 3-4min per side or until you get some good grill marks on each side. Remove from grill and allow to cool.

3. For Raita, place the dragonfruit, yogurt, vanilla extract banana, and strawberries into a food processor or blender and pulse until smooth. 

4. Serve the Dragonfruit Raita alongside of the grilled pineapple.
