Ham, Cheese and Chive Scones

Wondering what to do with your leftover ham from Easter dinner? Make Ham, Cheese and Chive Scones! 

Ingredients:

1 cup Pastry Flour

1 Cup Bread Flour

½ tsp. Salt

2 ½ tsp. Baking Powder

4 oz. Cold Unsalted Butter, diced into pea size pieces.

1 ½ cups Cheddar Cheese, shredded.

1 cup Cooked leftover ham, diced.

2 tbsp. Fresh Chives, chopped finely

1 cup Heavy Whipping Cream.

2 tbsp. Honey *optional

How to: 

Preheat oven to 425F.

In a stand mixer combine the flours, salt, baking powder, and butter. Mix well to incorporate everything, if needed break the butter into smaller pea size pieces by hand before continuing.

Add in your diced ham, cheese and chives continue to mix on low speed. Then add cream all at once and slowly start to turn the mixer up to med speed. (You want a dough to form and almost pull away from the sides of the bowl).

Once the dough is formed (it won't be a very wet dough) mix it by hand if needed to incorporate any leftover dry crumbs into the dough. On a sheet pan lined with parchment paper form little scones in whatever shape you like and place them about 1 inch apart on the parchment paper and brush the tops with honey. 

Bake for 12-14 minutes or until the scones are nicely browned, serve with honey and butter!
