SAN ANTONIO – Located on the River Walk at 152 E. Pecan St., Restaurant Gwendolyn is doing things differently from other places. The concept in their kitchen is everything old school.
Cooking techniques used are from 1850 and earlier, means is showcasing local ingredients and making food honest again.
"That's the way it's been done throughout history until recently, and it's just a more sustainable way," Chef de Cuisine Adreas Imhof said.
Not only is Restaurant Gwendolyn using every part of the animal, but they are also cooking with no electrical appliances.
"Nothing with a plug in this kitchen," Imhof said. "We have no blenders, no food processors and all our meat is ground with an old hand crank grinder."
This unique touch to fine dining is why the restaurant has been such a success since 2010, and it also provides a very intimate dining experience.
"Inside its really small, intimate restaurant," Imhof said. "Only about 10-12 tables or so."
Because of the different techniques showcased, the staff is opening up their kitchen to other chefs.
Every month, another chef from San Antonio will take over the kitchen and face the challenges of not using any electrical appliances.
