San Antonio woman taking over barbecue world

Laura Loomis getting national attention as pitmaster of Two Bro's BBQ Market

SAN ANTONIO – Laura Loomis is one of only a handful of female pit masters.

She's in charge of the pits at Two Bro's BBQ Market on West Avenue.

Loomis has called San Antonio home for over 15 years, and when she started working at Two Bro's she knew nothing about barbecue. She started as a cashier, but eventually became intrigued with the place and the process of making barbecue.

Loomis would become a pit hand for a year and half, learning on the ins and outs of barbecue. Then the day came and she was given the job as pit master.

"Honestly the reception has been really great," Loomis said. "Nobody's really said anything negative about it, they think it's pretty cool."

Since taking over, Loomis has been featured on Travel Channel, eater.com, and Texas Monthly.

Her barbecue menu features brisket, chicken, cherry-glazed ribs, sausage and turkey.

As for any tips to how to cook the perfect barbecue; "Patience," Loomis said. "You can't rush barbecue. You just have to know when to rotate and how to keep an eye on it."
