San Antonio – Since 1995, Chicago Bagels & Deli has been open at 10918 Wurzbach Road.
Mark Morales originally applied to work at the bagel shop when it opened, and has since been a part of the establishment.
In 1999, Morales got the opportunity to buy the business and has been running it with his own family ever since.
"We are originally from San Antonio, we are not from Chicago," Morales said. "We just left the shop with the same name, the way it was," Morales said.
With a variety of 18 different kinds of bagels, they truly are one-of-a-kind.
"The bagels are boiled and that's what sets us apart," Morales said.
They are briefly boiled before put into an oven, giving them the texture and taste they are supposed to have.
Besides bagels, other kinds of breads are made here weekly, including challah bread and cinnamon rolls.
All are made from scratch, with no preservatives.
"We have a saying here, "We love making bagels for people who know bagels," Morales said. "And people who know bagels come to Chicago Bagel."
There is a true passion at the eatery for the food and customers have approved for over 20 years.
