Live roaches lead to temporary closure of Korean restaurant's kitchen

Chaz Kitchen, located at 1431 North Pine, received an 88 on its Sept. 8 inspection.

SAN ANTONIO – Metro Health temporarily shut down the kitchen of a Korean restaurant earlier this month after inspectors found live roaches, according to an inspection report.

Behind the Kitchen Door is an ongoing series where KSAT investigates health inspections of restaurants in San Antonio.

Chas Kitchen

Chas Kitchen, located at 1431 North Pine, received an 88 on its Sept. 8 inspection.

KSAT visited the restaurant this week and spoke with a manager about the 7 violations listed in the report.

“We already fixed everything and don’t have any problems right now,” he said.

Metro Health told KSAT the kitchen was closed for three days because of the pest issue. The report said there were live roaches in the kitchen.

The report also noted a bottle labeled “roach medicine” inside the restaurant. “We’ve changed everything here,” the man said. “Sorry about that.”

The inspector also noted that the temperature of sausage, shredded cheese, and refried beans were in the 60s while in a walk in cooler for more than four hours. The report said food stored in the walk-in cooler needs to be at or below 41 degrees.

Umiya Sushi

KSAT also visited the new Umiya Sushi on 911 North Hunt Lane.

The restaurant received a 78 during a Sept. 11 inspection, records show.

The report cited several violations, including unheated tempuras and a fly issue. Inspectors also found employees using their phones, washing their hands and eating while wearing gloves, without changing them afterward.

“That’s not sanitary,” said KSAT reporter Daniela Ibarra.

“That’s some employees’ first day that work here,” said the manager. “So we already have a policy.”

The manager allowed KSAT cameras behind the kitchen door to give customers a glimpse of the conditions.

“Even if they cannot see, we want to make sure everything is clean and good,” the manager said.

He also said kitchen staff members were fired after the inspection report, and added that the restaurant is working to correct mistakes during its soft opening phase.

“I appreciate you guys coming,” he told KSAT.
